Here’s how to make it:
Ingredients:
🧅 1 small red onion, diced
🍅 1 pint cherry tomatoes, quartered
🫘 16 oz black beans, rinsed and drained
🫛 16 oz black-eyed peas, rinsed and drained
🌽 2 ears of corn, steamed and cut off cob
🫑 1 green bell pepper, diced
❤️ 1 red bell pepper, diced
🌿 A bunch of cilantro, finely chopped
Dressing:
🫒 1/3 Extra Virgin Olive Oil
🍋🟩1 lime, zested and juiced
🍎2 tbsp apple cider vinegar
🧂3 tbsp paprika powder
🧂A sprinkle of salt and pepper
How to make it:
• Combine cherry tomatoes, onion, black beans, black eyed peas, corn, bell pepper and cilantro in a large bowl.
• In a separate bowl, whisk together olive oil, lime zest and juice, apple cider vinegar, paprika, salt and pepper.
• Pour dressing over other ingredients, season with more sea salt, paprika and pepper if needed, toss and combine well.
• Tortilla chips were made with organic non gmo corn tortillas fried in beef tallow and sprinkled with sea salt
